Sorry if this is a dumb question but can anybody tell me why no one use parlors as breeders and what will happen if you breed one with a not so deep but frequent roller?

Parlours are just that,,floor birds.If you cross 'em with a BR you will end up with pure junk.Welcome to RPDC.
