My loft was and still is ten by five by six-six. I have four that size. I keep on average five to eight pair in each one. I also have a battery of sixteen single mating pens that are four by two by eighteen inches.

8'x 8' by about 8'tall at the center of a pitch roof! Second loft now is 8'x 12'x 8'tall! Still 8'x 8' for the open part and the extra 4'x 8' section will eventually be 6 to 8 individual breeding pens!
The second loft was necassary for me to have a way to seperate the cocks and hens in the off-breeding season! Also during breeding season, I can put 4 to 5 prs in each and they don't get so stressed out! ---------- Val

3 is plenty. That is what I have right now. It is about having fun. Measure what you can afford and what you can put into it.
Don't worry about the size of the loft. Rollers don't need that much space.

The first year I had rollers I built a double kitbox with each section about 3 x 4 x 4. I put 4 pair in one side and the youngsters went into the other.
And I flew in the Fall fly 7 monts after getting the 4 pair.
