In a couple of my pairs , i always get two young the same color as the male , and in another pair the female is the dominating color factor in the young . Is this just coincidence?, and will it always be same , or will it change from time to time?

Some colors will be determined by the parents, others will not and will appear at random, some being present with one of the parents and some being recessive in nature.
I suggest you start here:

Then get a good book like Axel Sell's to learn more about the basic inheritance of colors in pigeons.
